The Science Behind the Pit Barrel Cooker
With this all-around heat dynamic, the Pit Barrel Cooker goes way beyond your standard convection cooking methods.
To ensure that you’re cooking your meat from all sides the Pit Barrel Cooker uses something they call the “hook and hang” method.
This means you hang your meat in the middle of the barrel, where it is being heated from every side.
On top of that, as the meat hangs the juices drip onto the hot coals at the bottom of your barrel. When they hit the coals, a smokey fog is created, which fills the barrel and surrounds the meat.
This adds even more natural flavor, making for even better tasting meat.

Here are just a few things to follow when using your Pit Barrel Cooker:
- Do Not Place it On Any Flammable Surface Like a Wood Deck or Dry Grass
- Place on Paver Stones or Bricks if Possible – Four 12″ x 12″ paver stones in a 2×2 design patter is recommended
- NEVER Use Lighter Fluid on Hot Colas in the Barrel

Elevation Matters

For the most part, the only thing you need to worry about is how you adjust the bottom air vent. Basically, those at lower elevations will only need to open the vent a little bit, while those at the highest elevations will need to open it the most.

- 2000-5000 FT: 1/2 Open
- 5000-8000 FT 3/4 Open
- Above 8000 FT: All the Way Open
